Who doesn’t love a nice bowl of warm, comforting chili this time of year? This one uses green lentils, quinoa and two types of beans to pack in a serious amount of plant-based protein and other nutrients; plenty of peppers and spices, meanwhile, kick up the flavor.

Quinoa & Black Bean Bowl with Blood Orange Sriracha Vinaigrette, Eating Bird Food

The combination of quinoa, black beans and seasonal produce (in this case, kale, sweet potato and avocado) is always a winner in our book – and this protein-packed, plant-based bowl is no exception. But what really makes this dish special is the accompanying vinaigrette. It’s sweet, spicy, pretty, and seriously delicious.

Vegan Italian Shepherd’s Pie, Fork & Beans

Another traditional meat dish-turned-vegan delight, this Shepherd’s Pie foregoes the animal products for protein-packed green lentils and fresh vegetables. We love that the crust is made from ready-made polenta (see all of our varieties here) for maximum ease and convenience on a busy weeknight.
