Baked Quinoa & Brown Rice Cakes

1 pouch Ancient Harvest Microwavable Quinoa & Brown Rice with Garlic
3 eggs
¾ cup shredded mozzarella
1 tbsp flax seed


Pre-heat the oven to 425F.
Place all ingredients in a bowl mix well. Pour into an 8” x 8” grease glass dish, line with parchment paper that goes over each side (to make it easier to remove), spread the mixture evenly, and press on it.
Bake for 20 minutes. Remove using the “handles” from the parchment paper. Cut in 9 small squares and serve warm.
