Fresh Salsa & Mango Veggie Rotini Pasta

2 tablespoons, EVOO
4 roma tomato, cut in quarters
8 tomatillos, cut in quarters
2 poblano peppers, deseed and cut in quarters
2 jalapenos, deseed and cut in quarters
8 garlic cloves, smashed
2 limes, juice
¼ bunch cilantro
1-2 tablespoons salt


1 box Ancient Harvest Veggie Grain Free Rotini Pasta
½ cup salsa
1 mango cut in small cubes
2 tablespoons cilantro, chopped
½ cup crumbled queso fresco


Cook the pasta in salted boiling water according to the packaging instructions.

Heat up a large iron cast pan on high heat, add the EVOO. Once the oil is hot adding the tomatoes, tomatillos, peppers and garlic. Cook the vegetables for 5 to 10 minutes until soft. Transfer everything to a high-speed blender. Add salt, lime and cilantro to the blender, blend a couple of time taste adjust salt. Set aside.

Transfer the pasta to a bowl add the salsa, mango, cilantro and queso fresco divide in 4 bowls and enjoy!
