Herby Pistachio and Garlic Spaghetti

Pistachio Herb Veggie Spaghetti

Fresh herbs, pistachios and garlic add bold, fresh flavor to our Ancient Harvest Veggie Pasta. Try this recipe by @xxrlilly.


  • 1 box Ancient Harvest Veggie Spaghetti
  • 3 tbsp pistachios
  • ⅓ c olive oil
  • 4 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 2 sprigs fresh oregano
  • 2 tsp dried thyme
  • 2 tsp dried basil
  • 2 tsp dried rosemary
  • ¼ lemon
  • A pinch of salt and pepper
  • ½ c pitted green olives
  • 2 tbsp white wine (I used chardonnay)
  • 2 tbsp fresh grated parmesan
  • ½ c grape tomatoes, halved


  1. Pre-heat oven to 350°F
  2. In a small pan, toss pistachios in a bit of olive oil and salt. Roast for 5 minutes.
  3. Meanwhile, begin to boil your spaghetti in a medium sized pot.
  4. In a large pan over medium high heat, add olive oil, garlic, olives, lemon and herbs.
  5. When spaghetti is tender, drain and let cool under cold water. The cold water will help avoid clumping!
  6. Add drained spaghetti, pistachios and white wine to large pan of olive oil and spices. Let simmer for 5 minutes to thicken.
  7. Serve with fresh tomatoes and a sprinkle of parmesan!
