Summer Veggie Pasta with Cherries and Spinach Pesto

Enjoy this Summer Pasta with Cherries Recipe by @zazachef_cook.eat.repeat We used Ancient Harvest Grain-Free Veggie Pasta to make this dish.

1 box Ancient Harvest Veggie Rotini Pasta, cooked according to the packaging instructions
½ cup spinach pesto*
¼ cup pitted cherries, cut in quarters
4 tbsp goat cheese, crumble in pieces
1 cup of red cabbage, slice very thinly with a mandolin


*Spinach Pesto
6 Cups baby spinach leaves, packed
¼ Cup toasted pecans nuts
1 to 2 Tbsp of lemon Juice
¼ Cup Extra Virgin Olive Oil
⅓ Cup freshly grated parmesan
1 tsp of salt


In a large bowl mix all the ingredients and divide into 4 portions.

Mix in a food processor everything except for the olive oil and parmesan
Add the oil while the machine is running
Transfer to a bowl and add the parmesan
