Vegan Pesto Mac and Cheese

A vegan mac and cheese sauce mixed with our veggie packed Rotini makes for a delicious any night meal! Get the recipe from @upbeetandkaleingit.

Total Time: 15 minutes



  • 1 box Ancient Harvest Veggie Pasta


  • 3 cups russet potatoes peeled and cubed
  • ⅓ cup vegetable broth
  • 1 handful fresh spinach
  • 1 handful fresh basil
  • 2 tbsp nutritional yeast
  • ¼ cup pine nuts
  • 1 medium-large garlic clove
  • 1 tsp onion powder
  • ½ tsp sea salt


  1. Cook the pasta according to package directions.
  2. Boil the potatoes in water until they are tender,  about 12 minutes.
  3. Add all sauce ingredients to a food processor and blend until a thick and smooth
    consistency forms.
  4. Mix the sauce with the pasta and enjoy!
