Veggie Pasta with Creamy Sauce

Enjoy this Cauliflower and Caper Pasta Packs recipe by Tatiana Rodriguez @tativegancooking We used the Ancient Harvest Veggie Penne Pasta to make this dish.

Ingredients

One box of Ancient Harvest Veggie Penne Pasta, cooked according to the instructions on the box

Creamy Sauce
1 tablespoon tomato paste
¾ cup plant-based milk
Cashew cream (see recipe below)*
¼ teaspoon garlic powder
Pinch onion powder
2 teaspoons avocado oil

*Cashew Cream
½ cup cashews, soaked for 10 minutes
½ teaspoon lemon juice
½ teaspoon vinegar
2 teaspoons nutritional yeast,
2 to 4 tablespoons of water
Salt to taste

Directions

Cashew Cream Sauce
Start by making the cashew cream sauce since the cashew will need to soak for 10 minutes or more.
Add all ingredients fo to a food processor and blend until smooth.
Add more water if needed. Adjust nutritional yeast and salt to taste.

Creamy Sauce
Heat oil in a pan and cook tomato paste for about 5 minutes, add milk, cashew cream, and seasoning, and simmer for 5 minutes.
Combine pasta with sauce and top with sautés veggies of your liking.
