Veggie Rotini Pasta with Vegan Pesto

1 box of Ancient Harvest Grain-Free Veggie Rotini Pasta
¼ cup of roasted pine nuts
⅓ cup of nutritional yeast, or sub parmesan/non-dairy parmesan
1 finely grated garlic clove
2 cups of basil leaves
1 cup of spinach
¼ cup of olive oil
½ tsp of salt


Bring half a pot of water to a boil, and then pour in a box of this pasta.
As it’s boiling, make the pesto by blending the ingredients above in a food processor until it becomes a pesto paste
In a pan on very low heat, pour in about ⅔ cup of the pesto you made into the pan.
When your pasta is done cooking, drain the pasta water out completely (do not rinse your pasta please) and add it to the pan with the slightly heated pesto.
Toss the pasta in the pesto until each pasta noodle is evenly coated. Serve with more nutritional yeast or parmesan. And enjoy!
