Veggie Rotini, Warm Fall Pasta Bowl

Enjoy this pasta dish @eatrunandallinbetween. For this recipe, the Ancient Harvest Veggie Rotini Pasta was used.



1 box Ancient Harvest Veggie Rotini Pasta

1 tbsp avocado oil

1 cup chopped broccoli

1 tbsp garlic

½ cup frozen butternut squash

2 cups kale, chopped

2 tbsp hemp hearts

1 tbsp capers


For the Sauce

1 tbsp of tahini

1 tbsp Dijon mustard

2 tbsp coconut aminos

1 tsp apple cider vinegar

¼ tsp ginger

¼ tsp curry powder.


Follow directions on box for cooking pasta.

While that’s cooking, add avocado oil to nonstick pan.

Add the chopped broccoli and garlic, sauté́ until beginning to soften.

Add frozen butternut squash and curry powder, Himalayan salt, onion powder and black pepper. Once all of that is cooked, turn off stove and add kale to let it wilt. Top bowl off with hemp hearts and capers.
