Winter Bowl with Quinoa, Brown Rice & Garlic

Enjoy this Baked Quinoa & Brown Rice Cakes recipe by @zazachef_cook.eat.repeat We used the new Ancient Harvest Ready to Eay Brown Rice & Quinoa Family size to make this dish.

Ingredients

1 pouch Ancient Harvest Microwavable Quinoa & Brown Rice with Garlic
2 zucchini cut in half moon
1 onion, sliced thinly
2 carrots peeled julienne style
10 oz cooked pork tenderloin, cut into cubes
1/2 cup chopped cilantro
1-2 teaspoons avocado oil

 

Directions

Reheat the pouch in the microwave according to the instructions, transfer to a large bowl

In a medium-size pan over medium to high heat, add the avocado oil and wait one minute for the oil to warm up. Add the onions saute for 3 to 4 minutes then add the zucchini. Add to the large bowl along with the carrots and the cilantro. Mix well and divide into four bowls.
