Ingredients

  • 6 Tablespoons unrefined virgin coconut oil, melted
  • ½ cup honey
  • 2 ½ tablespoons natural almond butter, stirred well
  • 2 teaspoons pure vanilla extract
  • 1 ½ cinnamon
  • ¼ – ½ teaspoon fine sea salt
  • 2 ½ cups Ancient Harvest Quinoa Flakes, uncooked
  • 1 cup chopped raw nuts
  • ½ cup unsweetened finely shredded coconut
  • ½ cup raw pumpkin seeds, optional

Directions

  1. Preheat oven to 300° F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Stir wet ingredients, cinnamon, and salt in a large bowl until fully combined.
  4. Stir in all dry ingredients until fully combined.
  5. Pour onto the pan and spread in an even layer.
  6. Bake 18 to 24 minutes, until light golden brown, stirring gently after 10 minutes. (For larger clusters, do not stir.)
  7. Remove and allow granola to fully cool. It will crisp once cool.
  8. Gently break and store in an airtight container in the fridge for up to 3 weeks.
