Ingredients

  • For the patties:
  • ½ cup uncooked Ancient Harvest Quinoa
  • 1 cup water or vegetable/chicken stock
  • 1 (15 oz) can chickpeas
  • ¼ cup parsley, chopped
  • ¼ cup cilantro, chopped
  • ½ cup chopped spinach
  • ½ teaspoon garlic powder
  • 1 teaspoon cumin powder
  • ¼ cup lemon juice
  • 2 tablespoons tahini
  • 1 teaspoon paprika
  • Dash of red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 egg
  • ¼ cup red onion, finely diced
  • For the creamy avocado dressing:
  • 1 medium ripe avocado
  • ¼ cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh cilantro
  • Sea salt and pepper to taste

Directions

  1. For the patties:
  2. Cook the quinoa: in a saucepan, heat the 1 teaspoon of olive oil. Sauté the quinoa for 1 minute. Add the vegetable stock and bring to a rolling boil, reduce heat, cover and cook for 15 minutes. Turn off stove and let stand for 5 minutes. Remove the lid, fluff quinoa and let cool.
  3. Place a rack in the center of the oven and preheat the oven to 450 degrees F. Prepare a baking sheet with nonstick spray; set aside.
  4. In a food processor, combine the chickpeas, parsley, cilantro, spinach, garlic, cumin powder, coriander powder, lemon juice, tahini, paprika, red pepper flakes,egg, and salt and pepper. Pulse until all the ingredients are thoroughly mixed.
  5. In a large bowl, combine the chickpea paste, quinoa and onions. Divide the mix into even patties. Place on the greased baking sheet. Bake for 20 – 25 minutes or until lightly golden brown. If desired, gently flip the patties mid-way using a spatula for even browning. Serve with dressing.

  7. Combine all ingredients in blender and process until smooth.
