Sauce
2 cups of cashews (soaked overnight and drained)
1 garlic clove
¼ cup nutritional yeast
1 cup unsweetened almond milk
a dash of turmeric
paprika
salt
Pasta
1 box Ancient Harvest Supergrain pasta, cooked according to the directions
1 can of cannellini beans
1 cup leafy greens like spinach
Combine the cashews, garlic clove, nutritional yeast, almond milk, turmeric, paprika, salt, and pepper in a blender.
Blend until a consistent sauce is formed – depending on how thick or thin you want it, you may need to add more almond milk.
Add the pasta back into the warm pot along with the cheeze sauce, cannellini beans, and leafy greens like spinach (or broccoli would be good too).
Toss it together & enjoy!
