Enjoy this Rapid Lunch Recipe by @realfoodwithsarah. We used Ancient Harvest Microwavable Chickpea & Garlic Quinoa to make this dish.


1 package Ancient Harvest microwavable organic quinoa (I used the quinoa with chickpeas & garlic blend)
Big handful of spinach
6 grape tomatoes, sliced in half
½ cup seedless cucumber, diced
6 olives, sliced in half
Sprinkle of feta cheese
Your favorite salad dressing


Throw everything in a big bowl and enjoy
