A Chunky Monkey Quinoa Breakfast Cake

Enjoy this Quinoa Cake by @_justbeetit. We used Ancient Harvest Harmony Quinoa to make this dish.



¼ cup Ancient Harvest Harmony Quinoa (raw)
⅓ banana
1 tbsp chia seeds
½  scoop of vanilla protein powder
⅔ cup almond milk
1 tbsp chocolate chips


1 tbsp peanut butter
1 tbsp walnuts, chopped
½ tbsp chocolate chips

Peanut Butter Glaze

½ scoop vanilla protein
½ tbsp peanut butter powder
Almond milk (enough to reach a glaze consistency)


Preheat oven to 400F
In a blender, combine quinoa, banana, chia seeds, scoop of vanilla protein and cup almond milk until smooth. Stir in 1 tbsp chocolate chips and pour into a greased ramekin.
Bake for 30 to 45 minutes for a cake-like consistency (if you prefer your tops set but inside gooey, shoot for 25 minutes)
Top with peanut butter, walnuts, extra chocolate chips and your pb glaze.
Pourrrrr on the glaze and ENJOY!
