Ancient Harvest Protein Pasta Salad


Enjoy this veggie pasta salad that is packed with protein and fiber! This was created by Elisabeth Michaels @zazachef_cook.eat.repeat


1 package of Ancient Harvest Protein Pasta Rotini, cooked according to the direction on the packaging
1 cup broccoli, cooked
2 cups spinach, chopped in small pieces
1 cup red cabbage, cut very think with a mandolin
½ cup cucumber, cut very small
1 cup beet, cooked and cut in small cubes
½ cup pesto


Mix everything in a bowl and enjoy! If you don’t plan on eating everything right away don’t add the cucumber. If you refrigerated the left overs the pasta will get a little hard and you will have to reheat your leftovers.
