Baked Hummus Protein Pasta


Enjoy this Bakes Hummus Pasta Recipe by @findyouraltitude. We used Ancient Harvest Rotini Protein Pasta to make this dish.


1 box Ancient Harvest Rotini red lentil protein pasta
4 ½ cups of cherry tomatoes
3 tbsp avocado or olive oil
2-3 tsp Pepper
2-3 tsp Dried basil
2-3 tsp Dried oregano
2-3 tsp Dried Parsley
Few shakes of salt.
8 to 10 chopped garlic cloves
1 cup of your favorite hummus
Juice of 1 lemon
¼ cup chopped fresh basil


Preheat oven to 400F
In a baking dish, mix together cherry tomatoes, oil, salt, pepper, and dried herbs. Give it a good stir. Bake in over for 30 min.
While this is baking, cook your pasta, drain and set aside.
Remove from oven, add in chopped garlic to tomatoes, stir all together but don’t mash it up.
Add hummus to the middle of plate (don’t mix), add a few more shakes of dried herbs.
BROIL for 8-9 min.
Remove and squeeze lemon, add in the cooked pasta, basil, add more garlic if you want. Stir all together! I topped mine with more basil and nutritional yeast!

Option to have this alone or serve with protein of choice: I topped mine with shrimp that I cooked in a pan (2-3 min on each side just with lemon juice).
