Barbie Sauce with Corn, Rice & Quinoa Spaghetti

1 box Ancient Harvest Corn, Rice & Quinoa Spaghetti Pasta
1 tbsp olive oil
1 onion, diced.
2 garlic cloves, diced.
2 packages Love Beets, cut in smaller pieces.
1 cup chicken broth (or vegetable broth)


Cooked the pasta according to the direction on the packaging. Drain, rinse and reserve aside.
In a large pan medium heat add olive oil when hot add the onions and garlic sauté for 4-5 minutes. Add the beets and the broth and cook for another 4-5 minutes. Transfer to a high speed blender and blend until you obtain a creamy texture.

Transfer to a bowl and the sauce, mix well and serve with goat cheese and/or parmesan. Enjoy!
