Salad
5 cups arugula
1 cup Ancient Harvest Power Grain Blend, cooked
1 cup blackberries
¾ cup blueberries
1 large avocado, sliced
1 cup cucumber, sliced
1/3 cup feta
1/3 cup roasted cashews
For the dressing:
1/3 cup extra virgin olive oil
3 tbsp fresh lime juice
2 tbsp honey
2 tbsp fresh mint, finely chopped
¾ tsp sea salt
¾ tsp black pepper
Whisk all ingredients together for the dressing and set aside.
Combine all ingredients for the salad in a large bowl. Drizzle on dressing and enjoy!
