1 box Ancient Harvest Corn, Brown Rice & Quinoa penne pasta, cooked according to the packaging
1 heaping cup roasted butternut squash
1 heaping cup cashews, soaked for at least 10 minutes in hot water
3 tbs nutritional yeast
¼ cup and 1 tbsp oat milk
3 tbs olive oil
1 tsp paprika
⅛ tsp cayenne pepper
Salt and pepper to taste
Blend all ingredients (except for the pasta) until smooth and creamy, adding more liquid if necessary.
Boil one box of Ancient Harvest gluten free pasta for 6-9 minutes. Drain then stir in sauce.
