Cauliflower and Caper Pasta Packs

Enjoy this Cauliflower and Caper Pasta Packs recipe by Deanna D. @deesdailydish We used the Ancient Harvest Veggie Rotini Pasta to make this dish.

Ingredients

2 boxes Ancient Harvest Veggie pasta
¼ cup extra virgin olive oil
1 Tbsp dried oregano
½ tsp. red pepper flakes
2 tsp. salt
1 tsp. lemon zest + 3 tbsp fresh lemon juice
4 cups finely chopped cauliflower florets
3 Tbsp capers (rinsed and drained)
½ cup grated parmesan cheese or nutritional yeast

Directions

In a cast-iron skillet (or oven-safe pan), add your water, oil, oregano, red pepper flakes, and 1 ½ tsp. salt. Once it comes to a boil, add in the pasta. Stir occasionally, until liquid becomes mostly reduced and pasta is al dente (about 6/7 minutes). Remove from heat and add your lemon juice and zest.

Prep your cauliflower by combining it with 2 Tbsp olive oil, ½ tsp. salt, capers, and parmesan. Spread over your pasta.

Place your cast iron skillet in your oven under your broiler, and broil for about 5 minutes until the cauliflower becomes golden.

Remove from the oven, drizzle a little more olive oil and enjoy!
