Chicken Fajita Pasta with Protein-Packed Noodles

  • 1 onion, chopped
  • 1-pound chicken, rough chopped
  • 1 package taco seasoning mix
  • 2 cups sliced red and green bell peppers
  • 1 box Ancient Harvest Protein Green Lentil Penne
  • 1 cup shredded Monterey Jack cheese


  1. Set a skillet over medium heat and add olive oil and onion, cooking until translucent, about 3 minutes. Add chicken and taco seasoning, cooking for 5 minutes then stirring to flip chicken pieces. Continue cooking and stirring until chicken is cooked through, adding bell peppers about halfway through.
  2. While chicken is cooking, cook pasta according to package instructions, until al dente. Drain and add to skillet with chicken and peppers.
  3. Sprinkle with taco seasoning, tossing to coat. Top with shredded cheese, and serve.
