Chicken & Quinoa Stuffed Baby Bell Peppers 1

½ cup Ancient Harvest Harmony Quinoa
½ lb ground chicken (or ground turkey, or ground lamb)
1 bag of baby bell pepper, cut in half deseed
1 tbsp Preserved lemon
1 tbsp za’atar
2 cups spinach, cooked and chopped
½ cup pine nuts, chopped
1 tbsp date syrup


Pre-heat the oven to 400F.

Line a baking sheet with parchment paper.

Cooked the quinoa according to the package.

While the quinoa is cooking, sauté the ground chicken make sure to break all the pieces.

Transfer the cooked quinoa, ground meat and the rest of the ingredients into a bowl. Mix well, taste test and adjust the seasoning.

Fill the peppers with the stuffing place on the baking sheet, continue until there’s none left.

Bake in the oven for 25 minutes

Serve warm!
