Chickpea, Sweet Potato & Spinach Curry with Harmony Quinoa sheet pan

Total Time: 60 minutes


Avocado oil spray
1 medium onion, chopped
1-inch ginger, grated
2 cloves garlic, minced
1 medium sweet potato, peeled, chopped
½ tsp. cayenne pepper
½ tsp. sweet paprika
½ tsp. turmeric
1 tsp chili powder
1 tbsp salt
14 oz. can chickpeas
2 cups chicken bone broth
1 cup coconut milk, canned
½ cup Ancient Harvest Harmony Quinoa raw
3 cups spinach, chopped


Preheat the oven to 350F.

Spray a 13’ X 9’ Pyrex dish with avocado oil then add the onion and garlic. Cook in the oven for 10 minutes. Remove from the oven.

Add all the other ingredients except for the spinach.

Cook for about 45 minutes, until the sweet potatoes are soft.

Remove from the oven, add the spinach mix well and serve!
