Cranberry & Almond Quinoa Pilaf

Ingredients

  • 1 ½ cup Ancient Harvest Quinoa, cooked
  • ½ cup scallion greens, sliced
  • ½ cup dried cranberries
  • ½ cup toasted sliced almonds
  • ½ bunch parsley, chopped
  • 1 tsp. sugar
  • 1 tbsp. Olive oil
  • 1 tsp. salt
  • 1 tsp. red wine vinegar
  • Pepper to taste

Directions

  1. In a large bowl, combine, parsley, scallions, and dried cranberries.
  2. Add in cooked and cooled quinoa.
  3. In a separate bowl, make the dressing.
  4. Whisk together the olive oil, red wine vinegar, sugar, and salt.
  5. Add to the quinoa mixture and stir to combine.
  6. Top with almonds and season with pepper to taste.
