Creamy Avocado Pesto Rotini

Ingredients
1 box Ancient Harvest Gluten-Free Rotini Pasta
1 medium avocado
2 cups baby spinach
½ cup packed fresh basil, stems removed
3 to 6 tablespoons low-sodium vegetable broth
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 large garlic clove, peeled
Salt, to taste
Optional topping: grilled shrimp
Directions
Cook rotelle according to package instructions, until slightly al dente.
Drain and rinse in a colander with cold water to stop the cooking process.
Meanwhile, place all other ingredients in your blender, starting with 3 Tbsp. of broth.
Blend until fully smooth.
Heat sauce in the cooking pot over medium-low.
Add pasta and stir gently until heated through. Thin out with broth as desired.
Season with salt to taste, then serve hot. Optional: top with grilled shrimp.
