  • 1 box Ancient Harvest Gluten-Free Rotini Pasta
  • 1 medium avocado
  • 2 cups baby spinach
  • ½ cup packed fresh basil, stems removed
  • 3 to 6 tablespoons low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 large garlic clove, peeled
  • Salt, to taste
  • Optional topping: grilled shrimp


  1. Cook rotelle according to package instructions, until slightly al dente.
  2. Drain and rinse in a colander with cold water to stop the cooking process.
  3. Meanwhile, place all other ingredients in your blender, starting with 3 Tbsp. of broth.
  4. Blend until fully smooth.
  5. Heat sauce in the cooking pot over medium-low.
  6. Add pasta and stir gently until heated through. Thin out with broth as desired.
  7. Season with salt to taste, then serve hot. Optional: top with grilled shrimp.
