Creamy Tomato Rosé Sauce with Protein Penne Pasta

There are vodka sauces and red wine sauces, and now there’s a creamy tomato pasta sauce that’s made with the light and delicious flavor of rosé! Stir in Ancient Harvest Plant-based Protein Green Lentil Penne Pasta for up to 25g of plant-based protein per serving, and make it an even more protein-packed meal with a serving of grilled chicken on the side. The only thing that will make this deliciously flavorful pasta recipe any better is sipping on the extra rosé while you prepare it. Bon appétit!

Ingredients

  • 1 pound boneless chicken breast
  • Pinch salt and pepper
  • 3 tablespoons olive oil
  • 2 boxes Ancient Harvest Plant-Based Protein Green Lentil Penne
  • 8 cloves garlic, chopped
  • 1 cup rosé
  • 7-8 Roma tomatoes, diced
  • 2 teaspoons coconut sugar
  • 1 ¼ cups cream

Directions

  1. Heat the olive oil in a large skillet over medium-high heat and season chicken with salt and pepper. When pan in hot, place chicken breasts and cover, searing for 5 minutes, flipping and cooking for another 5 minutes. Reduce heat to medium-low and continue cooking, covered, until chicken is no longer pink in the middle. Remove to a cutting board and set aside.
  2. Cook pasta according to package instructions, to al dente. Drain and toss with olive oil to prevent noodles from sticking.
  3. While pasta is cooking, return the skillet to medium heat and add garlic, cooking for 2 minutes, until fragrant. Add rose to deglaze the pan, and bring the liquid to a boil. Reduce heat and simmer for 2-3 minutes.
  4. Stir in tomatoes and coconut sugar, bring mixture back to a simmer, then stir in cream.
  5. Slice the chicken and stir it into the tomato rose sauce. Toss with penne and enjoy!
