1 box of Ancient Harvest Plant-Based Protein rotini pasta
1 cup roasted butternut squash
1 cup roasted brussels sprouts
1 cup roasted yellow onions
¼ cup dried cranberries
¼ cup feta cheese
¼ cup chopped pecans
¼ cup poppyseed dressing
Prepare the pasta according to box directions. Once cooled add in the veggies, cheese, nuts and stir to combine. Top with dressing and refrigerate until ready to eat.
