Fast and Easy Summer Bowl

Enjoy this fast and easy summer quinoa bowl that is super versatile! Add whatever ingredients that you have in the fridge. This recipe is great because it’s healthier than rice and it’s full of protein and fiber and super filling! Created by Faith at @actualfoodie.

Ingredients

1 cup cooked Ancient Harvest USA Grown Quinoa
2 cups Chicken broth
Bag of spinach
Chopped cherry tomatoes
Chopped cucumber
Chopped red onion
Chopped avocado
Feta cheese

Dressing:
Lemon Juice
Olive oil
Salt and pepper
Garlic cloves

Directions

Boil chicken broth and cook Quinoa according to packaging directions

To make dressing, whisk together olive oil, lemon juice, salt, pepper and garlic clove and set aside.

Chop all vegetables then add together in a big bowl with spinach and quinoa, top with homemade dressing and feta and enjoy!
