Greek Chickpea Elbows Pasta Salad


Welcome spring with this gluten-free pasta salad. While this recipe by @xxrlilly packs bold flavors and up to 21g of plant-based protein per serving thanks to Ancient Harvest Chickpea Elbows, it’s a cinch to throw together for lunch, dinner, or a spring picnic.

  • 1 box Ancient Harvest Gluten Free Elbows, prepared
  • 1 pint grape tomatoes, halved
  • ⅓ cup pitted olives
  • 3 mini cucumbers, sliced
  • ¼ red onion, chopped
  • 2 tbsp fresh basil & oregano
  • ½ lemon, juiced
  • 2 tbsp olive oil
  • ¼ cup feta crumbles


  • Boil and prepare pasta.
  • Halve your grape tomatoes, slice cucumbers and chop red onion.
  • Toss all ingredients and enjoy!
