  • 1 (8 oz) package Ancient Harvest Protein Green Lentil  Penne
  • 1 cup thin asparagus spears, trimmed and sliced diagonally
  • 1 large carrot, peeled, halved lengthwise, and sliced approximately ¼-inch thick
  • 1 cup peas, fresh or frozen (thawed)
  • 1 cup whole baby corn
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • 1 bunch spring onions, sliced
  • 2 tablespoons lemon juice
  • ¼ cup chopped parsley
  • ¼ cup chopped basil
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • Optional: ½ cup freshly grated Parmigiano-Reggiano cheese


  1. Cook pasta according to package directions. Drain, reserving ½ cup pasta water, and set aside.
  2. While pasta is simmering, cook asparagus in a pot of boiling, salted water for 4 minutes, adding carrot, peas, and baby corn halfway through.
  3. Drain, and rinse all under cold water.
  4. Add all vegetables including cherry tomatoes, spinach and spring onions, olive oil, herbs, and cheese if using to pasta pot with reserved water and stir to combine.
  5. Serve warm or cold.
