Grilled Polenta with Tomato Avocado Salad

Ingredients

  • 4 vine ripe tomatoes, diced
  • 1 avocado, diced
  • 1 cucumber, peeled and diced
  • 1 ½ cups baby arugula
  • ¼ cup diced red onion
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ¼ cup fresh parsley, minced
  • salt and fresh pepper to taste
  • 2 (18 oz) tubes Ancient Harvest Polenta rolls, sliced into ½ in rounds
  • cooking spray

Directions

  1. Coat a grill pan with cooking spray and preheat to medium-high.
  2. Combine tomatoes, avocado, cucumber, arugula, and onion in a bowl.
  3. In a small bowl, whisk olive oil, vinegar, lemon juice, zest, and parsley. Season with salt and pepper to taste. Add to vegetable mixture and let stand while preparing polenta.
  4. Add polenta slices to hot grill pan and cook 2-3 minutes per side, until golden brown. Serve topped with salad.
