Hakka Noodles - Spicy Indo-Chinese Dish @simplysap

Ingredients

Hakka Noodles

1 box of Ancient Harvest Plant Based Protein Green Lentil Spaghetti

1 large red bell pepper, sliced

1 medium red onion, sliced

3 scallions, chopped

 

Sauce

2 ½ tbsp soy sauce

1 tbsp rice vinegar

½ tsp maple syrup

1 tsp lemon juice

1 tsp chili sauce

Directions

Begin by cooking pasta according to the directions of the packaging. Drain and rinse with cold water to stop the cooking process. Add ½ tablespoon of coconut oil to the noodles and toss so that the noodles get lightly coated with the oil and don’t stick to each other. Set it aside.

In a wok heat ½ tablespoon of coconut oil on medium-high heat. Once the oil is hot add the red bell pepper and red onion for a minute. Push veggies to the side, lower the heat and add soy sauce, rice vinegar and maple syrup. Mix everything together and add the pasta, chili sauce, lemon juice and scallions.
