Harmony Quinoa Salad with Cannellini Beans and Herbs

2.5 cups Ancient Harvest Harmony Quinoa, cooked
1 can cannellini beans, drained and rinsed
2 cups carrots, grated
1 cup micro arugula (Aerofarms is my preferred brand)
½ cup finely chopped flat-leaf parsley
2 tbsp chopped chives

2 tbsp tahini (Soom is my preferred brand)
2 tbsp fresh lemon juice
2 tbsp cold water
Pinch of garlic powder
Pinch of salt and cayenne pepper


Small leaves butter lettuce
Micro arugula
Truff hot sauce

In a small bowl, whisk together the tahini, lemon juice, water, salt, garlic powder, and cayenne.
In a large bowl add the quinoa, cannellini beans, carrots, microgreens, and herbs.
Mix in the vinaigrette and adjust salt and pepper to taste.
Serve on a large platter, garnished with the lettuce topped with micro arugula and Truff sauce.
