Herby Quinoa Salad


Enjoy this Herby Quinoa Salad Recipe by @basilandbiceps. We used Ancient Harvest Traditional Quinoa to make this dish.



1 cup Ancient Harvest Traditional Quinoa
2 cups water
1 tsp salt


½ cup cucumber, seeded
½ chopped red onion
2 chopped Roma tomatoes, seeded
Turmeric roasted chickpeas **
Chopped mint, cilantro, and basil


2 juices of lemon
¼ cup olive oil
Vegan feta


In small pot, add quinoa, water and salt, bring to a boil, reduce to low, cover, and let cook for 15 to 17 minutes.

Add all ingredients to a bowl, mix well, sprinkle in some crumbled feta, continue to season as needed.

For plating: add your salad to a bowl, finish with lemon juice, tahini, and red pepper flakes, ENJOY!

**For the roasted chickpeas: coat chickpeas in olive oil, garlic powder, salt, pepper turmeric, parsley, and oregano then bake in oven for 20 minutes at 375 F
