Mexican Quinoa Stuffed Peppers

1 cup Ancient Harvest Harmony Quinoa
2 cups vegetable stock
3 green bell peppers
1 can tomato sauce (you can sub a cup of salsa if you prefer spicier)
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 onion, diced
1 can black beans, drained
1 can corn, drained


Preheat the oven to 375F. Take the seeds out of the peppers after slicing in ½.

Microwave peppers for 10 minutes. Cook quinoa with the vegetable stock.

In a pan, cook the onions over medium heat until starts to become translucid. Once done, add to the quinoa.

Then add the tomato sauce, beans, corn, garlic, onion & salt. Mix well.

Stuff peppers with the mixture in a baking dish.

Bake in oven for 25 to 30 minutes.

Garnish with red onion & cilantro.
