1 cup Ancient Harvest Traditional Quinoa, cooked
Β½ cup black beans
Β½ cup corn
ΒΌ cup green onions
2-3 tbsp cilantro
1 bell pepper, cut into small cubes
1 tomato, cut into cubes
Dressing
1 lime
2 tsp garlic
1 tsp cumin
Salt to taste.
Cook one cup of Ancient Harvest Traditional Quinoa according to the package directions.
Make your dressing with juice from one lime, garlic, cumin, and salt to taste.
Add in your veggies- black beans, corn, green onions, cilantro, peppers, and tomatoes.
Mix all together and enjoy!
