Middle Eastern Ancient Grains Salad

1/2 cup Ancient Grains Power Blend, prepared according to package instructions

For the vegetables:
½ cup diced red bell pepper
½ cup diced Roma tomatoes
½ cup diced red onions
½ cup diced Persian cucumbers
2 tbsp chopped parsley
2 tbsp pomegranate molasses
2 tbsp extra virgin olive oil
Juice half a lemon
Salt to taste


Cook the Ancient Grain Power Blend according to instructions, and set aside to cool. Dice the vegetables into small cubes, and mix with the cooled grains. Add the olive oil, salt, lemon, and pomegranate molasses and toss together. Serve and enjoy!
