Nickelatti Bolognese

CRQ Penne, Bolognese Sauce Pasta

Enjoy this pasta dish @brooklynsbites. We used Ancient Harvest Plant-Based Protein Penne pasta to make this dish.


2 tbsp olive oil
1 yellow onion, diced
5 garlic cloves, minced (*NOT jarred – whole cloves. This makes a big difference!)
1 lb ground Italian sausage
3, 15 oz cans diced tomatoes
2, 12 oz cans tomato sauce
1 can tomato paste
1 tbsp sugar
¼ cup red wine
¼ cup fresh basil, chopped
2 tsp dried oregano
2 bay leaves
The rind of a parmesan cheese block
½ tsp crushed red pepper flakes
Salt & pepper
1 box Ancient Harvest Corn, Quinoa & Brown Rice penne pasta


In a large pot, add olive oil, diced onion and garlic cloves. Simmer for 3 mins or until the onions are translucent.
Add ground Italian sausage and cook until browned – about 5-7 minutes
Add diced tomatoes, tomato sauce, tomato paste, sugar and red wine. Stir until well combined
Add basil, oregano, bay leaves, parmesan rind, crushed red pepper, salt & pepper and bring to a simmer
Let it simmer on the stove for at least an hour, but the longer the better! I like to start mine at 6-7am so that it is ready after 12-hours of simmering for dinner.
Once you are ready to eat, remove the bay leaves and parmesan rind, pour over noodles, top with parmesan cheese, ENJOY!
