One-Pot Creamy Red Pepper Pasta

Protein Penne, Red Pepper Pasta

Enjoy this pasta dish @katieanne.w. We used Ancient Harvest Plant-Based Protein penne pasta to make this dish.


2 tbsp olive oil
3 cloves garlic
½ onion
2 tsp smoked paprika
½ tsp turmeric
½ tsp salt
1 tsp pepper
2 zucchini
1 pint cherry tomatoes
8 oz mushrooms
1 14oz jar roasted red peppers
¾ cup oatmilk
1 ¾ cup veggie broth
1 box Ancient Harvest Plant-Based protein pasta, cooked according to package
3 cups chopped kale
Lemon to top


Heat the oil on medium-high, toast garlic, onion, and spices for 3 minutes.
Add the veggies. Puree the peppers and milk until smooth, then add to the pot.
Pour in the veggie broth and add the Ancient Harvest Protein Pasta.
Stir in the kale. Cover and cook on low for 25 minutes.
