Ingredients

1 cup Ancient Harvest Quinoa Flakes
2 tbsp chia seed
2 cups oat milk, divided into two 1 cup (or any type of milk)
1 cup strawberries, cut in pieces
1 persimmon, cut in pieces
1 cup blueberries
1 cup blackberries
1 cup pomegranate seeds
4 tbsp date syrup
*Organic blue spirulina powder (optional)

Directions

Mix the chia seed and 1 cup of milk, let it sit for 20 minutes and mix again*.
I a separate cup add the quinoa flakes and the rest of the milk and mix well and poor over the chia seed mix. You can let it sit overnight but the flakes are very small and thin so it doesn’t need to sit overnight like oat would have to.
Top with dates, seasonal fruits and date syrup.
*I added blue spirulina powder to half of the chia seed mixture and gives a really nice blue color to the chia pudding.
