Polenta French Toast

Get creative with pantry staples! Our heat-and-eat polenta is reimagined into French Toast with this recipe by @stelleandcobakes.

  • 1 package of Ancient Harvest precooked Traditional Polenta, sliced 1 inch thick⁣⁣
  • 3 large eggs⁣⁣
  • ½ cup coconut sugar⁣⁣ (substitute with sweetener of choice)
  • ½ cup full fat coconut milk⁣⁣ (substitute milk of choice)
  • 2 teaspoons cinnamon
  • dash of salt
  • 1 teaspoon Vanilla extract
  • 1 tbsp coconut oil


  1. Preheat a cast iron skillet on the stovetop on medium-low heat. Add coconut oil to the skillet.
  2. In a large bowl, whisk the eggs, sugar, vanilla, cinnamon, salt, and coconut milk.
  3. Dip each polenta slice generously inmixture, coating each side thoroughly.
  4. Fry each side of the polenta for 5 minutes, or until browned on both sides.
  5. If necessary, coat slices with more mixture after flipping, using a spatula.
  6. Top with maple syrup or fresh berries.
