CRQ Rotini, Pumpkin Harvest Pasta

Enjoy this pasta dish @healthbyshortstack. This dish was made with Ancient Harvest Organic Gluten-Free Corn, Brown Rice and Quinoa Rotini.


1 box of Ancient Harvest Organic Gluten-Free Rotini
1 cup pure pumpkin purée
1 red bell pepper, roasted then peeled
2 tbsp oat milk (or any milk)
1 tsp smoked paprika
¼ tsp nutmeg
¼ tsp cinnamon
Salt & black pepper to taste*


Cut the top off one red bell pepper and take out the seeds. Roast in the oven at 400F for about 40-45 minutes, until nicely charred. Once cool, peel the skin off. Set aside.

Cook the Ancient Harvest Organic Gluten-Free Rotini according to package directions. Set aside.

In a food processor, add the roasted/peeled red bell pepper + the rest of the sauce ingredients and purée until smooth, scraping down the sides as needed. Warm the sauce, then mix into the pasta. Enjoy!

*Optional to add garlic and onion if desired as I’m sure it would be tasty. I didn’t add it because it doesn’t sit well with my stomach.
