Quinoa and Nut Granola

Total Time: 45 minutes


1 cup shredded coconut
1 cup cashews, chopped.
1 cup walnut, chopped.
1 cup pecans, chopped.
2 cups quinoa, cooked.
2 tsp cinnamon
1 tsp ginger, grounded.
3 tbsp coconut oil, melted.
¼ cup maple syrup
2 tsp vanilla extract


Preheat the oven to 325F.
Mix all the ingredients in a large bowl. Spread evenly onto a large baking sheet covered with parchment paper. Bake for 20 minutes.
Raise the temperature to 350F stirring occasionally and bake for another 10 minutes.
Let it cool down and enjoy! Keep refrigerated in an air tight container.
