Quinoa Balls 2

Ingredients

½ cup raw Ancient Harvest Traditional Quinoa & 1 cup of water
1 cup pitted dates
¾ cup pecans, toasted
½ cup cashew nut butter
¼ cup hemp hearts
2 tbsp cacao powder + more for rolling the balls
1 tbsp maple syrup
¼ tsp salt

Directions

On a stovetop, add water to a pan on high heat. Once the water is boiling add the raw quinoa stir once and reduce the heat to low, cover and let it simmer for 15 to 20 minutes.

Taste test and remove from the heat let it sit for 5 minutes. Remove the cover and fluff it with a fork. Transfer to a plate to let it for a few minutes before using.

In a food processor, place the pecans and pulse a few times until the pecans are almost in a powder. Add the dates and pulse a few times to break the dates until it forms a soft paste. Add the rest of the ingredients and process until everything is well mixed.

Using an ice cream scooper (size ½”) make small balls and roll them in cacao powder. I only rolled them in cacao powder since the balls were very sticky.
