Quinoa Blueberry Breakfast Bake

Ingredients

½ cup quinoa flakes
1 egg
½ cup milk
1 tablespoon maple syrup
½ teaspoon vanilla
1 teaspoon cinnamon
½ cup blueberries

Directions

Preheat oven to 350F and grease a small baking dish.
In a small bowl mix together quinoa flakes, eggs and milk, syrup, vanilla and cinnamon.
Place blueberries in prepared baking dish and pour quinoa mixture over the top. Gently mix.
Place in oven on top of a baking sheet. Cook for 15- 20 minutes.
Let cool, top with whipped cream!
