Apple and Sage Quinoa Stuffing

Ingredients

  • 4 cups chicken stock*
  • 2 cups Ancient Harvest Traditional Quinoa
  • 2 tablespoons olive oil
  • 1 medium red onion, diced
  • ½ pound bulk sausage*
  • 1 medium butternut squash, peeled, seeded and diced
  • 1 cup coarsely chopped dried apricots
  • 2 apples, peeled and chopped
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon dried sage
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground pepper
  • 1 cup fresh chopped parsley

Directions

  1. Bring vegetable stock to a boil in a saucepan, reduce heat to low, and stir in quinoa. Cover pan and simmer until quinoa absorbs the liquid, 10 to 15 minutes. Remove from heat.
  2. Heat olive oil in a large skillet over medium heat. Saute onion 2-3 minutes. Add sausage and cook 5 minutes, breaking up with a spoon to brown. Add butternut squash, apples and ¼ cup water, and cook, stirring until softened, about 10 minutes. Stir quinoa and seasonings into the skillet mixture.
  3. Stuff in turkey or transfer to a 9 x 13 baking or 3-quart casserole dish, cover with foil, and bake at 350 F for 30 minutes; serve as a side.
  4. *To make vegetarian and vegan, use vegetable stock; omit sausage and add 2 chopped zucchini and 1 chopped red pepper to skillet with squash and apple.
