Quinoa Carrot Cake

These Quinoa Carrot Cake Muffins are made with quinoa flakes! It’s a great way to get protein and fiber in your diet. Recipe by Kristen Sellentin @kristensellentin.

Ingredients

1 cup Ancient Harvest Quinoa Flakes
2 cups almond flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon nutmeg
½ teaspoon ground ginger
Pinch of sea salt
3 eggs
¼ cup melted coconut oil
½ cup maple syrup
¼ cup unsweetened applesauce
¼ cup coconut yogurt or yogurt of choice
1 cup grated carrots
½ cup almonds chopped (optional)

Directions

  • Preheat the oven to 350ºF. Grease a muffin pan or line w/ greased muffin cups.
  • In a large bowl, whisk together the dry ingredients.
  • In a separate bowl, beat together the wet ingredients. Pour the wet ingredients into the dry ingredients and stir together until fully combined. Fold in grated carrots and nuts.
  • Transfer the batter to the prepared muffin tin. Bake on the center rack for 20 minutes.
  • Let it cool & enjoy!
