Quinoa Chocolate Zucchini Brownies

Ingredients

  • 1 cup cooked Ancient Harvest Quinoa, any variety
  • 1 ½ cups shredded zucchini
  • ½ cup unsweetened cocoa powder
  • ⅓ cup maple syrup
  • ½ cup loosely packed avocado
  • ¼ cup coconut oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ teaspoon salt
  • 3 ounces melted dark chocolate

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine all the ingredients in a food processor or high speed blender and blend well.
  3. Pour the batter into an 8 X 8 baking dish coated with cooking spray or lined with parchment lined paper.
  4. Bake for 35 to 40 minutes, or until edges are firm, and center fairly firm. (“Toothpick test” may not work, as brownies will continue to solidify with cooling.)
  5. Let the brownies cool completely before removing them from the pan. Store in an airtight container in the fridge.
