Quinoa Fried Rice

Ingredients

  • 8 Ounces Ancient Harvest Microwaveable Organic Quinoa with Chickpeas & Garlic
  • 2 tbsp olive oil
  • ¼ cup diced onion
  • 1 cup broccoli florets chopped into bite sized pieces
  • ½ cup diced bell peppers
  • ¼ cup shredded carrots

Simple Teriyaki Sauce

  • 1 tbsp sesame oil
  • ½ cup coconut aminos
  • 1 tbsp maple syrup

Directions

  1. On the stovetop, bring a medium skillet with olive oil to medium heat.
  2. Once the oil is warmed, add onion and cook for 2 minutes until fragrant.
  3. Add the broccoli, bell peppers, and carrots. Cook for another 5 to 7 minutes until the veggies are very lightly browned.
  4. While the veggies are cooking, quickly whisk together the teriyaki sauce ingredients.
  5. Add the entire package of Ancient Harvest Microwaveable Quinoa with Chickpeas & Garlic along with the teriyaki sauce.
  6. Fry in the pan for another 3 to 5 minutes until the chickpeas are golden.
  7. Enjoy!
